Diner avocado toast is griddled, not toasted, and that turns out to matter more than anything you put on top.
One face goes onto a buttered griddle. The other stays soft. You get a crisp, golden, buttery surface to hold the avocado, and a tender underside that yields when you cut it. Toasted on both sides in a toaster, the bread goes uniformly hard, and the first press of a knife shatters it and sends everything sliding.

Ingredients
- 4 thick slices sourdough
- 2 ripe avocados
- 2 tbsp butter
- juice of 1 lime
- 1/2 tsp fine salt
- 1/4 tsp black pepper
- 1/4 tsp red chilli flakes
- 2 eggs (optional)
- 200 g cherry tomatoes, halved
- fresh coriander
Method
- Avocado, lime, salt and pepper into a bowl.
- Mash roughly with a fork; leave it lumpy.
- Melt butter in a pan on medium.
- Bread in, one face down, 3 minutes. Do not turn.3 minutes
- Spread the avocado on the griddled face.
- Tomatoes, chilli flakes, coriander.
- Poached egg on top if using.
Griddle, not toaster
A toaster dries bread from both directions using radiant heat. A buttered griddle browns one face by conduction, quickly, while the rest of the slice stays largely as it was.
Medium heat, butter in the pan, three minutes. The butter is doing flavour work as well as heat transfer — a griddled slice tastes of butter in a way a toasted one never does.
The avocado should be roughly mashed
Smooth purée looks tidy and eats like paste. A rough mash — half broken down, half in visible chunks — gives you something to bite.
Mash it in the bowl with a fork, not with a blender. Eight or ten presses is enough.
Lime, and why it is not just for browning
Everyone knows acid slows avocado browning. Less obvious: avocado is fatty and fairly bland, and without acid the whole plate is rich with nothing cutting it.
The lime is a seasoning first and an anti-browning measure second. Do not under-do it because you are only thinking about the colour.
Salt matters just as much. Under-salted avocado tastes of nothing.
What you need
- 4 thick slices sourdough or rustic white bread
- 2 ripe avocados
- 2 tbsp butter
- juice of 1 lime
- 1/2 tsp fine salt
- 1/4 tsp black pepper
- 1/4 tsp red chilli flakes
- 2 eggs, if you want them poached on top
- 200 g cherry tomatoes, halved
- fresh coriander
Method
- 1. Halve the avocados, scoop into a bowl, and add the lime juice, salt and pepper.
- 2. Mash roughly with a fork. Leave it lumpy.
- 3. Heat a frying pan or griddle on medium and melt the butter.
- 4. Lay the bread in butter-side down and leave it 3 minutes, until deep golden. Do not turn it over.
- 5. Spread the avocado thickly on the griddled face.
- 6. Tomatoes, chilli flakes and coriander over the top.
- 7. A poached egg on each, if you are having one.
Poaching the egg, briefly
Simmering water, not boiling — rolling water tears the white apart. A teaspoon of vinegar helps the white set. Stir a whirlpool, drop the egg into the centre, and give it three minutes for a soft yolk.
Fresh eggs poach far better than old ones. The white of an older egg has thinned and spreads into rags no matter what you do.
Assemble at the last minute
Avocado on griddled bread starts softening it immediately. This is a two-minute window dish, and there is no version of it that survives being made ahead.
If you are cooking for several people, griddle all the bread first and keep it on a rack — not stacked, which steams it — then top everything at once.
Storing
None. Mashed avocado browns within the hour even with lime, and the bread goes soft.

How ripe should the avocado be?
It should give under gentle thumb pressure. Firm avocado will not mash; overripe is stringy and grey.
